Buche de Chevre is a delightful soft-ripened cheese made from goat's milk, originating from the Poitou-Charentes region in the Loire Valley, central France. This log-shaped chèvre is aged for at least seven days, giving it a crusty, firm, edible rind with a traditional bloomy mold. Inside, the texture is dense and chalky, with a creamy layer just beneath the rind. When young, it offers a mild goat flavor, which intensifies and becomes sharper as it matures.
