Sage Derby is a gourmet cheddar-style cheese flavored with sage leaves and naturally colored with chlorophyll, giving it its distinctive green marbled appearance. The finely chopped sage adds a delicate herbal note, while the cheese is aged for around 12 weeks, similar to a mild cheddar.

The tradition of adding sage to Derby cheese dates back to the seventeenth century. At the time, sage was prized for its digestive and health-supporting properties, which led to the creation of Sage Derby. It was traditionally enjoyed during harvest season and at Christmas.

As one of the oldest British specialty cheeses and one of the original flavored cheeses, Sage Derby is truly distinctive. Unlike many flavored cheeses, the sage is incorporated during the cheesemaking process rather than added later. With its striking appearance and subtle herbal character, it makes a unique and festive addition to any cheese board or buffet.

• Shipping : cheese is shipped in a triple-layer box liner with insulation and ice packs, providing up to 48 hours of protection.

Due to the specialized packaging and expedited shipping required, cheese does not qualify for free shipping. However, adding non-perishable products to your cart will grant you access to free shipping for those items.​

Please note that we ship from Monday to Thursday (Cutoff Time : 11AM PT) for 1-day delivery, to avoid any weekend delays.

Cheese is shipped as a fresh (not frozen) product.

• Refrigeration : Keep cheese wrapped in wax paper or parchment paper, then place it in an airtight container or resealable bag. Store in the fridge at 2-6°C (36-43°F) to maintain freshness.

• Serving Temperature : Bring to room temperature (30-60 min) before serving for the best flavor and texture.

• Mold & Safety : Mold does not necessarily mean you need to throw away your cheese!

- Hard Cheeses : If mold appears, simply cut away at least 1 inch around and below the moldy area. The rest of the cheese is safe to eat.

- Soft Cheeses : If mold appears on soft cheeses, it's recommended to discard the entire piece, as the mold may spread beyond the visible area.

• Always inspect your cheese carefully, and if you have any doubts about its safety, refer to the USDA guidelines or contact us for more information.

• Shelf Life : Soft cheeses last about 1-2 weeks, while hard cheeses can last 3-6 weeks if stored properly.
