Brie L'Indulgent is made at the same plant that produces Brie de Meaux, in the small commune of Raival — population 243 — in the Grand Est region of northeastern France. The area is one of middle-range mountains whose valleys hold herds of twenty to thirty cows, outside grazing for ninety percent of the year.

It is a rich cheese, and a surprisingly smooth and creamy one. Beneath the white, downy rind lies a creamy paste that melts on the tongue.

Its high fat and moisture contents combine into a melting, addictive texture. Young, it carries a fresh, faintly acidic taste of cream. As it ripens the acidity fades, the paste turns runnier, and the cheese quietly asserts its character. Towards the end of its shelf life the rind grows more pronounced, giving you the most traditional ripened-brie flavour — the one connoisseurs look for.

• Shipping : cheese is shipped in a triple-layer box liner with insulation and ice packs, providing up to 48 hours of protection.

• Refrigeration : Keep cheese wrapped in wax paper or parchment paper, then place it in an airtight container or resealable bag. Store in the fridge at 4°C (40°F) or colder.

• Serving Temperature : Bring to room temperature (30-60 min) before serving for the best flavor and texture.

• Mold & Safety : Mold does not necessarily mean you need to throw away your cheese!

- Hard Cheeses : If mold appears, simply cut away at least 1 inch around and below the moldy area. The rest of the cheese is safe to eat.

- Soft Cheeses : If mold appears on soft cheeses, it's recommended to discard the entire piece, as the mold may spread beyond the visible area.

• Always inspect your cheese carefully, and if you have any doubts about its safety, refer to the USDA guidelines or contact us for more information.

• Shelf Life : Soft cheeses last about 1-2 weeks, while hard cheeses can last 3-6 weeks if stored properly.
