I selected this butter for three main reasons. The first is that it comes from Brittany, where I am from. The second, because it's commonly known as the best butter in the world. 

Moreover, Jean-Yves Bordier stands as the sole artisan who still practices the traditional method of kneading churned butter in a wooden cylinder and manually adding fine sea salt. During this kneading and salting phase, the butter expels water, a process affectionately referred to as "crying" which enhances its flavor, enriches its nuances, and gives it a smooth texture.

Last but not least, the milk used by Jean-Yves Bordier is organic.
