Mimolette, also known as "Boule de Lille," traces its origins to the reign of Louis XIV, when the king banned the import of Dutch cheeses into France. In response, the residents of Flanders (now part of Belgium), who had deep cultural connections with Holland and a strong love for Dutch cheeses, found themselves either smuggling in their favorite varieties or attempting to create their own with a French twist. This led to the creation of Mimolette. Aged Mimolette is a semi-hard cheese with the same spherical shape and texture as Dutch Edam, but it features a natural rind and a vibrant orange interior.

Highly popular throughout France, Aged Mimolette appeals to both novice cheese lovers and seasoned connoisseurs alike. This particular variety, aged for twelve months, offers a bold and flavorful experience.
