It has the Modena P.G.I. (Protected Geographical Indication) certification. Modena vinegars have the reputation of being the best in the world.


It is aged for 30 years in cherry wood barrels that give its unique aroma. And no caramel is added to develop complex aromatic profiles thanks to slow aging. The barrels are passed down generations making them unique.


Everything is 100% hand-made by this 4 generations old family business.

Introduced on 2005, Gold Label Balsamic Vinegar of Modena IGP is our most appreciated Balsamic. La Vecchia Dispensa has always loved cherry wood barrels, and this product is its greatest expression.

Our vinegar production was established in Castelvetro, among the Modena’s red fruit valley. Between Vignola and Castelvetro, in fact, there have always been rich cherry and black cherry orchards, highly appreciated all over the world.

The clear structure of this Vinegar is characterized by its high density and a particularly sweet taste that fades into cooked fruit hints notes. A remarkable character of this product is indeed its full body taste. The emphasized element is to be found on the aftertaste, when its acidity comes out: in fact, this precise final element clears the palate and leaves a refined aromatic note. Never forget that a good balsamic vinegar must not lose acidity!The thick consistency allows multiple uses in cooking without reduction or cooking needed.
