Leonora®, named after its home region, showcases the resurgence of Spanish cheesemaking in recent years. Created by Oscar Fernando Marcos Gonzalez, this soft-ripened, brick-shaped cheese draws inspiration from Galicia's traditional Babia and Laciana cheeses.

Gonzalez exclusively sources milk from Murciana goats raised on two farms, using lactic fermentation to craft the cheese’s signature bright, lemony flavor.

As it ripens, Leonora® develops a rich, mushroomy creamline that complements its balance of complexity, acidity, and richness. This cheese embodies the spirit of a new wave of Spanish cheesemakers who honor tradition while embracing innovation to redefine exceptional Spanish cheese.
