Words from The French Pantry

Raclette, one of the world's most iconic melting cheeses, originates from the Alps, spanning both the French and Swiss sides of the border. While the French version is slightly softer than its Swiss counterpart, their flavors are remarkably similar. Raclette features a semi-soft interior with small holes and a rosy, inedible rind. When enjoyed as a table cheese, it offers a smooth, creamy taste that balances mild saltiness and sharpness. However, our French Raclette is known for its bold, pungent aroma, which may not suit everyone. Traditionally, Raclette is melted (often by placing a half wheel near a fireplace and scraping off the melted top) and served over boiled potatoes, pickles, fresh vegetables, and sliced meats.
